Cooking always helps me. For my summer school classes, I have to pack lunches (I am spoiled and accustomed to school lunches being free). For tomorrow I made a couscous with mushrooms, shrimp, roma tomatoes. For the sauce I kept some of the broth from the above mixed up with fresh cilantro, fresh basil, lime and a touch of fresh mint. Then I put in some artichoke hearts and black olives. My side dishes I will have watermelon, soy nuts, fresh snap peas, and yogurt. (to drink I made a nice cold yerbe matte. I am planning my other meals for the week. |
