Can anyone tell me, what are the legal steps required by the courts for divorce filing notification, when the address of the defendant is unknown? (state of Mississippi)

It doesn't matter. Speak to ur attorney. You can go ahead and file a motion for divorce. After 60 days you can then see a judge and possibly have the divorce ended with out the other person.
